Celebrating National Lamb Day with 3 Generations
National Lamb Day is always a great excuse to invite friends or family around and cook up an epic lamb feast. Having just come off the back of the Covid-19 lock down we were eager to share our National Lamb Day celebrations with our grandparents, whom we had not seen for over 3 months.
However, having spent much of the lockdown developing new recipes for recipes.co.nz, the question of what to cook had me thinking. There were so many delicious recipes to choose from on recipes.co.nz. Never one to be overly decisive when it comes to feeding a crowd, I decided to settle on the tried and true favourite of mine - Slow Cooked Pulled Lamb.
My grandmother’s many years of cooking for her large family of five hungry children, meant a roast lamb was often her go to. This makes her somewhat of a master of lamb roasts in my opinion (I have many fond memories when I was younger eating Nana’s roast lamb with mint sauce), so I thought my somewhat fail proof Slow Cooked Pulled Lamb would impress her. As an added bonus, it would also be easy to eat for my 85-year-old grandfather who loves to complain if the meat is marginally tough. He blames it on his false teeth, and I can tell you the meat was amazingly tender, easily pulled apart and so full of flavour - so no complaints from Poppa. I teamed it with some Hasselback potatoes freshly dug from the garden and charred broccolini and corn.
Everybody raved about the lamb, and it really reiterated to me how good food does not need to be fancy. Kiwis across generations love roast lamb and the fond memories often associated with it.
