Easy lamb recipes from our favourite chefs

It’s been a tough time for the restaurant industry due to the Covid-19 Pandemic, but it was heartening to see so many chefs cooking in the their kitchens at home during the Level 4 lockdown. Online cooking became a big comfort to everyone as well as inspiring new ideas in our own kitchens. We’d love to share some easy lamb recipes you can cook at home from our chef community.

There is nothing better than getting kids to help in the kitchen, it not only keeps them busy but is teaching them a life long skill. Our Platinum Ambassador Chef, Shaun Clouston had a couple of little helpers in his kitchen. Here’s a couple of their easy peasy recipes to cook with your kids.

Lamb Rump Salad

A simple lamb salad using lamb rump is a tasty addition to any lunch or dinner. Here Darren uses Te Mana Lamb Rump, green beans, cherry tomatoes, baby beetroot, and goats cheese to whip up this tasty dish! Watch how he removes the fat cap and membrane before cooking your lamb rumps.

 
 

Slow Cooked Lamb Shoulder Curry

Turn a shoulder of lamb into an amazing rich curry, cooked long and slow in the slow cooker. For this recipe Darren uses Te Mana lamb shoulder on the bone.  He says normally with a curry you would take the bone out and dice the meat but doing it this way adds a depth of flavour with the bone being left in.  Darren slices the shoulder to open it up to allow the curry sauce to permeate through the meat, before he pops it in the slow cooker. Once cooked the bone should just fall away from the meat once its been slow cooked for several hours.
